I set trunk config up on jenkins back to building site and running assembly of package

We'd turned off site and packaging while figuring maven modularization.

I just reenabled it. We are running hbase-trunk and hbase-trunk w/ following:

-PrunAllTests -Dmaven.test.redirectTestOutputToFile=true site package
assembly:assembly -Prelease

(Ditto for 2.0.0 only it has the 2.0.0 hadoop profile added)
