I have not been able to find any documentation on how to use Interceptors
in flume-ng ?
Are there are examples of this ? I did find the javadocs API, but they
don't mention how to
go about configuring interceptors in the config file, etc.

we've recently significantly improved User guide. You could build it from svn trunk or you can download release candidate for upcoming version 1.2.0 from following link (see docs/FlumeUserGuide.html):
